Kait Cooks: New England Pot Roast
At the beginning of 2017, I listed out my goals for the year. One of those goals was to cook more and eat out less. I can proudly say that last week Nick and I stuck to this goal for the entire week and it felt great!
Those who know me know that I am fairly new to cooking. I’ve been trying to implement new recipes into our weekly dinners and I finally came across something last week! With our Disney trip coming up in just a month I have been wanting to try and make a version of the Liberty Tree Tavern New England Roast for fun!
When we went on our shopping trip last Sunday I was sure to pick up all the supplies to make this recipe happen. I must say that this New England Pot Roast turned out to be delicious!
New England Pot Roast
Here’s what you’ll need:
1/4 cup of vegetable oil
3 pounds of boneless beef shoulder or arm roast
1 stick of butter
2 cups of diced carrots
2 cups of diced celery
2 cups of diced onion
1/4 cup of chopped garlic
2 tablespoons of thyme
1 cup of flour
6 cups of beef broth
Salt & pepper for taste
How to make:
- Preheat your oven to 350 degrees
- Heat the vegetable oil in a heavy pan, browning your meat on each side
- Once browned, remove the meat.
- Add butter and wait for it to melt.
- After the butter has melted, add your carrots, celery, onion, garlic, and thyme.
- Cook until the vegetables are tender.
- Stir in your flour and continue cooking until the flour is lightly browned.
- Add the beef broth.
- Put the meat back into the pan.
- Cover and bake for one to two hours or until the meat is tender.
This recipe is great when served with mashed potatoes! If you’re looking to shake this recipe up, feel free to add mushrooms or a cup of red wine. I tend to be picky, so I made my New England Pot Roast without these ingredients!
One new recipe down, TONS more to go! I’m excited to challenge myself to cook more and to ultimately help us to eat out less. Being so new to adulting, it’s been hard for us to keep up with this goal, but I know we will continue to get better!
